Chocolate and Vanilla Pinwheel Biscuits…

So first recipe from the new book…. I tried making these today, I am no good at making pastry and the dough in this recipe I feel is just like pastry… I had trouble with the chocolate pastry, it was so brittle and I ended up getting covered in flour! but I managed to get some looking presentable and edible!


Vanilla biscuit dough

50g softened butter
25g caster sugar
25g cornflour
50g plain flour
½ large egg
½ teaspoon vanilla extract

Chocolate biscuit dough
50g softened butter
25g caster sugar
25g cornflour
40g plain flour
½ large egg
15g cocoa powder

  1. Lightly grease 2 baking trays
  2. Measure all the ingredients for the vanilla biscuit mixture into a bowl and mix to form a soft dough. Wrap in cling film and chill in the fridge for 30 minutes until firm. Make the chocolate mixture in the same way then wrap and chill.
  3. On a lightly floured work surface, roll out both pieces of dough to oblongs about 25x18cm (10x7in) Place the vanilla dough on top of the chocolate dough then wrap up together from the narrow edge. Wrap in cling film and chill again for about 30 minutes.
  4. Preheat oven to 180°c/Fan 160°c/Gas 4. Using a sharp knife, cut the roll into about 20 slices and place on the prepared backing trays.
  5. Bake in the pre-heated oven for about 20 minutes until the vanilla biscuit is golden in colour. Lift on to a wire rack and leave to cool.
