FERRERO ROCHER CUPCAKES | CAKES AND BAKES

This weekend I decided to whip up a batch of some cupcakes. I tend to make plain but decided to do some chocolate ones with an added twist! I used two of my favourite things and they came out rather well and were a HUGE hit!

Ingredients

  • 125g self rasing flour
  • 125g caster sugar
  • 125g margarine
  • 1 tsp baking powder
  • 50g {ish} cocoa powder {I actually didn’t measure this out!}
  • 3 large eggs
  • Nutella
  • 12 Ferrero Rocher

Method

  1. Preheat the oven to 180Β° {fan}. Set out 12 cupcake cases into a cake tin.
  2. Beat together the eggs and the sugar until smooth and fluffy. Add the flour, baking powder and eggs and whisk till until well combined. Add the cocoa powder and whisk on high speed until you have a smooth batter mixture.
  3. Fill the cupcake cases {the mixture should make 12 cakes}
  4. Bake in the oven for 15-18 minutes.
  5. Cool on a wire rack.
  6. Once cooled, cut out the middle of the cupcakes so you have a small hole. Fill the hole with a dollop of Nutella and add a Ferrero Rocher fro decoration. Push down slightly so it sits in the hole gently.
  7. Eat, and Enjoy!
