– Raspberry Fairy Cakes –

I had some raspberries left over this week and before they “turned” I thought I would pop them into some cakes. Fairy cakes are easy peasy and such a good little bake to bake with the children. I need practice with decoration. I am useless at decorating… Fact…

Ingredients

  • 125g butter
  • 125g caster sugar
  • 125g sifted flour
  • 2 large eggs
  • 1 tbsp Baking powder
  • 24 raspberries

Method

  1. Preheat the the oven to 180Β°/160Β° fan assisted and line a cup cake tray with 12 cake cases and add two raspberries into each case
  2. Beat together the butter and sugar until soft and creamy
  3. Add the sifted flour, baking powder and eggs gradually and beat together until fully combined
  4. Bake in the oven for 15-20 minutes until golden brown

Icing

  1. Sift 225g of icing sugar into a bowl and add 3 tbsp of water. Mix together until its to a thick consistency
  2. Decorate the cakes by spreading on the icing sugar and adding sprinkles

I normally add vanilla or almond extract to my cake mixture, I decided against it this time and regretted it instantly! Cakes taste so much better with an added flavour to them.
