An easy chocolate cake to make! I made mine with chocolate butter icing, and decorated with a few strawberries. Yum!
2 tablespoons cocoa powder
3 tablespoons boiling water
225g (8oz) softened butter
225g (8oz) caster sugar
4 large eggs
225g (8oz) self raising flour
2 level teaspoons baking powder
For The Filling
50g (2oz) softened butter
175g (60z) sifted icing sugar
1 heaped tablespoon cocoa powder
- Preheat the oven to 180°C/Fan 160°C/Gas 4. Grease 2 20cm (8in) sandwich tins then line the base of each tin with baking parchment
- Blend the cocoa powder and water in a mixing bowl and leave to cool slightly. Measure all the remaining ingredients into the bowl and beat until thoroughly blended. Divide the mixture evenly between the tins and level out.
- Bake in the pre-heated oven for about 25 minutes or until well risen and the tops of the cakes spring back when lightly pressed with a finger. Leave to cool in the tins for a few minutes then turn out and peel of the parchment and rest of a wire wrack.
- To make the butter icing, blend together the butter and icing sugar until smooth adding in the cocoa powder. Use the butter cream to sandwich together both cakes, leaving some back to use to stick down the strawberries to decorate the top of the cake.
