A few weeks ago I made a very special cake. Mr B turned 35, so as a treat I thought I would make him a birthday cake. We have a tradition that on our birthdays we are allowed to eat cake for breakfast. Definitely a must no for every birthday! Mr B loves almonds and cherries, so they made the perfect partners for a very perfect cake.


  • 200g butter
  • 200g golden caster sugar
  • 4 eggs
  • ½ tsp almond extract
  • 175g self-raising flour
  • 85g ground almonds
  • ½ tsp
  • baking powder300g glacé cherries
  • 100ml
  • milk
  • 2 tbsp flaked almonds

  1. Heat oven to 160C/140C fan/gas 3.
  2. Line the base and sides of a 20cm deep cake tin. {I used a round springform tin}
  3. Beat together the butter and sugar until light and fluffy
  4. Beat in the eggs, one by one. Fold in the almond extract, flour, ground almonds and baking powder, followed by the cherries and milk. {I actually forgot to add the milk!! Wouldn’t know what it does, BUT the cake came out really moist and rather delicious!}
  5. Scrape into the prepared tin, scatter over the flaked almonds, then bake for 1 hr-1 hr 15 mins. Cool the cake in its tin before serving.

    I so wish I liked cooked cherries (can eat them uncooked), as this looks delicious
