Banana & Chocolate Chip Bars

We had a fair amount of bananas left over from this weeks food shop, so we decided to use them up an a mammoth baking session.. First up we decided to make some banana & chocolate chip bars {we used the rest on a banana loaf cake}

I am not a fan of warm banana, but suprisinly these came out really well and only lasted 5 minutes once cooled! {huge hit with the kiddies too!}

Ingredients

  • 75g wholemeal self raising flour
  • 75g porridge oats
  • 75g demerara sugar
  • 100g butter
  • 1 ripe bananan
  • 25g chocolate chips

Method

  1. Pre-heat the oven to 180°/Fan 160°/Gas 4. Lightly grease a shallow 18cm square cake tin
  2. Mix together the flour, oats and sugar into a large bowl. Rub in the butter until the mixture resembles breadcrumbs. Spread half the mixture over the base of the tin and arrange the sliced banana on top. Sprinkle over remaining crumb mixture and press down well. Top with the chocolate chips.
  3. Bake in the pre-heated oven for about 25 minutes or until golden brown. Leave in the tin until cold and then cut into bars to serve.

A really healthy snack. The banana in the middle could be replaced with ready-to-eat dried apricots. This recipe makes 12 bars.
